You can use inkscape but you have to make sure you provide an AI compatible eps for final files ( the final files must be opened the same as it is designed in AI )..
Basically, you will have problem if you use effect or toning color in your logo design.
For plain design ( no toning, no effect, no raster image, font and outline if used has been converted to object, use CMYK or Pantone ) there should be no problem.
I recommend that you have also AI for checking or coloring.

Actually I mainly use CorelDraw to design ( It is much easier for me ). From CorelDraw, I export my file to PDF and open it in AI (for preparing the final files or for recoloring if I use toning color).
What can I tell you is that AI is industry standard...most printing company accepts AI file.

Personally, I find AI is a little bit not easy to use. I will be slower if I use AI to draw :) ( that's for me ).

I've tried inkscape before..In inkscape, node editing is quite like CorelDraw ( AI is a bit different...you might find yourself uncomfortable at first ).
AI have much more tools and effects than Inkscape.

I'm not sure whether inkscape have Pantone swatches or not...AI and CorelDraw have them (Normally for two colors logo, Pantone color is used)
