If it's a full color image you'll usually get an unmanageable mess from Image Trace, and will spend more time cleaning it up than it will take to bezier it out with the pen tool.
Image Trace can be useful, though, on extracting silhouettes from objects in white backgrounds and the like.
So it depends on the image, and how tonally isolated the object you want to extract is.
